Rice and Bean Burritos
I’m kind of obsessed with burritos, and tacos.. and well
Mexican food is pretty scrumptious- you know you love it.
Since I cut meat out of my diet I sometimes crave myself
some good ‘ol taco bell… ugh I don’t know what is in their meat (I don’t think
anyone does) but there’s no denying that it is SO delicious…. Mmm.. the
memories…
Rest assured I have a bean burrito recipe that won’t make
you miss their mystery meat! Just as long as you grab some of their hot sauce
packets- don’t lie you know you have some hangin out in your kitchen
drawer. The stuff from the store that
says “taco bell hot sauce” just ISN’T the same.
It’s not.
What you Need – This recipe feeds 4 Europeans or 2
Americans.
1 tbl oil
2/3 cloves of garlic (minced)
1 red pepper (roasted – you can do it yourself or buy it in
the jar) diced
1 tea cumin
1 tea chilli powder
Dashes of pepper
1 can black beans (drained and rinsed)
1 can pinto beans (drained and rinsed) – or any kind of
beans that you love.
¼ cup water
¼ cup salsa
2 cups brown rice (cooked—takes 1cup dry to make 2cups
cooked)
To Assemble you Need
6 whole wheat tortillas
Shreaded lettuce
*That’s all I put on
mine, but if you like sour cream you can use yogurt in it’s replacement, or
some cheese—go for it, they’re your tastebuds! J
The Fun Part
*prep*
--To roast red pepper – on gas stove slap the pepper on that
mess. Turn with tongs every couple of minutes, until it’s burnt- place in a
covered bowl- let steam for 5-10 minutes, until you can handle it and peal the
burnt skin off.
*you
can also do this in the broiler of your oven, or cook the pepper in a pan
until
soft
-- to cook rice; in pot put 1 cup rice 2 ¼ cup water (or
whatever the instructions on the bag say) boil/simmer for 15 minutes until
liquid is absorbed and rice is soft.
Okay- here we go!
-In Saucepan add oil,
garlic, chilli powder, cumin, and pepper.
Cook for 1 minute or until it starts to bubble.
- add beans and ¼ cup
water – let cook for 5 minutes until beans are soft- mash up a little bit
- stir in red pepper, rice, and salsa
- put in tortilla with assorted accoutrements that you
prefer.
