Tofurky Wrap


Tofurky Wrap

Have you ever tried tofurky deli meat?  I had my qualms… but then I tried it. 

Maybe it was my low expectations for it, but I tasted it and literally said “wow! This is awesome!”

And it really is kids. 

Here is one of my favorite wraps I have made for years, and it was easy to make it vegan… salvation…!



What You Need:

1 spinach wrap
1 tbl veganaise
1 tea taco seasoning
3 slices tofurky (I like hickory smoked)
1 slice vegan cheese
Shredded lettuce (as you can tell from the photo, I love lettuce)
Pepper

The Fun Part:

Take yo wrap
Dab on the veganaise
Sprinkle on that taco seasoning like it’s your job
Slap that turkey on that mess
Add the cheese
Load on the shreaded lettuce (or not)
And sprinkle with pepper
Roll up and…

Enjoy!

Tunafish Sandwich

I want a tunafish sandwich.

Yes that is all I am writing for this blog b/c ... really... need I say more?


So Here We Go.  What You Need: Makes 2 sammies

1 12 oz can tuna - drained
3 tbl veganaise (or mayo, or ranch dressing, but all I have is veganaise)
¼ tea celery seed
¼ tea pepper
Red Onion Slices
Mustard
Lettuce
4 pieces of bread


To assemble:

Mix drained tuna with veganaise (or mayo), celery seed, and pepper. 
On bread spread mustard
Plop on the tuna mixture
Layer red onion and lettuce

Repeat with second Sammie

I Enjoy mine with grapes J

Falafel Wrap


Fa Fa faaaaaaalafel (Falafel) Wrap


When I think about falafels I think about the Freddie Prince Jr. movie She’s All That! 

One of my favorite childhood movies, and since I’ve been in a child state of mind- watching all these one direction clips and all….

Anyway!  In the movie the girl works at a falafel place and she’s got a line “would you like to supersize those falafel balls?”  Don’t ask me why I remember that… I’ll tell you anyway…

Because I was massive obsessive over that movie!  I probably watched it every day for months… silly girl I was… But lets face it, Freddie Prince Jr. was a hottie mc hot pants!

ANYYYway, I have never had a falafel before …. Oh a month or so ago when I had a falafel wrap.  This recipe is a recreation of the most delicious thing I had tasted that day! 


So Here We Go.  What You Need:

For one wrap:
3 falafel balls – I make mine from a box, saves time! (one box makes like 12 balls)
2 tbl hummus
About ¼ cup diced cucumber
Slices of red bell pepper
Slices of red onion
Lettuce
Spinach wrap

The Fun Part

Spinich Wrap ready
Dab on hummus
Squash the falafel balls
Layer on the cucumber, pepper, onion, and lettuce.
Roll it up and…

Rice and Bean Burritos


Rice and Bean Burritos

I’m kind of obsessed with burritos, and tacos.. and well Mexican food is pretty scrumptious- you know you love it. 


Since I cut meat out of my diet I sometimes crave myself some good ‘ol taco bell… ugh I don’t know what is in their meat (I don’t think anyone does) but there’s no denying that it is SO delicious…. Mmm.. the memories…

Rest assured I have a bean burrito recipe that won’t make you miss their mystery meat! Just as long as you grab some of their hot sauce packets- don’t lie you know you have some hangin out in your kitchen drawer.  The stuff from the store that says “taco bell hot sauce” just ISN’T the same.  It’s not.


What you Need – This recipe feeds 4 Europeans or 2 Americans.

1 tbl oil
2/3 cloves of garlic (minced)
1 red pepper (roasted – you can do it yourself or buy it in the jar) diced
1 tea cumin
1 tea chilli powder
Dashes of pepper
1 can black beans (drained and rinsed)
1 can pinto beans (drained and rinsed) – or any kind of beans that you love.
¼ cup water
¼ cup salsa
2 cups brown rice (cooked—takes 1cup dry to make 2cups cooked)

To Assemble you Need
6 whole wheat tortillas
Shreaded lettuce
  *That’s all I put on mine, but if you like sour cream you can use yogurt in it’s replacement, or some cheese—go for it, they’re your tastebuds! J

The Fun Part

*prep*
--To roast red pepper – on gas stove slap the pepper on that mess. Turn with tongs every couple of minutes, until it’s burnt- place in a covered bowl- let steam for 5-10 minutes, until you can handle it and peal the burnt skin off. 
                 *you can also do this in the broiler of your oven, or cook the pepper in a pan
                 until soft
-- to cook rice; in pot put 1 cup rice 2 ¼ cup water (or whatever the instructions on the bag say) boil/simmer for 15 minutes until liquid is absorbed and rice is soft. 

Okay- here we go!

-In Saucepan add  oil, garlic, chilli powder, cumin, and pepper.  Cook for 1 minute or until it starts to bubble.
- add beans and ¼  cup water – let cook for 5 minutes until beans are soft- mash up a little bit
- stir in red pepper, rice, and salsa
- put in tortilla with assorted accoutrements that you prefer.

Mac n' Peas


Mac n’ Peas

  This use to be one of my husband’s favorite meals… oh lets face it!  Mac and cheese is the ultimate comfort food staple!  So since 86ing cheese from our diet it was only natural for us to crave some mac and cheese.  Luckily I have a recipe that won’t make you miss a thing!


It is so easy to make, I had my daughter on my hip the whole time.  She loves to help—or as she says ‘helm’, and she is finally at that stage where she actually can (she’s 16 months old).  She did most of the pouring in this recipe, she’s so big…

This recipe serves 2 ladies or 1 hungry man ;-)

1 ½ cups macaroni noodles (measurement not cooked)
1 cup frozen peas (or  1 can .. or broccoli- whatever you have)

3tbl earth balance butter (vegan butter)
¼ cup wheat flour
1/8 cup nutritional yeast
1 tbl mustard (I use brown, but you can use whatever)
2 tbl soy sauce
¾ cup almond milk (original- although I have used vanilla before and that worked too)

The Fun Part—

-Cook macaroni in pot of boiling water for 8 minutes or so-
-Just before noodles are finished add peas
- Drain

-In another pot melt butter
- wisk in flour – let cook for a minute or so
-Add in nutritional yeast, mustard, soy sauce, and almond milk


Mix sauce and noodles together, listen to that squishy sound, and enjoy J


Two ways to eat this… with a spoon… or w/ a fork ;-)

Tu-Tu-Tu-Tuna Cakes

I always find myself with a can of tuna in my cupboard- if not more, so this is always a go to recipe for me when I am out of ideas.

I mostly eat it for lunch, but hey – I’m not the boss of you- make it as a meal if you want, or as a snack – who cares? Not me.

 1 12oz can tuna
 ½ onion - chopped
 ¼ c breadcrumbs (any kind- I’ve even substituted with fish fry before)
 1 tsp pepper ½ tsp garlic powder (or mince some garlic if you feel like it)
2 egg whites ( I haven’t found a substitute for this yet to make it vegan, any suggestions?)
¼ tsp paprika (or chilli powder,or any other seasoning you like-Cayenne? Good enough!)
Oil for cooking

Mix all ingredients together Form into patties – I can usually get 5 out of this recipe, if you want them bigger, or smaller- that’s on you- Like the honey badger- I don’t care!

Oil pan on med-high heat and cook on each side for a few minutes (maybe three?) until they start browning on each side.

Top with sauce
¼ c veganaise (a couple heaping spoonfuls) (or mayonnaise, or yogurt, whatever!)
Sprinkle of chilli powder

 Mix. Yum.

 Serve with lettuce, or not- your choice. On a bun? I don’t care – just eat it! 
