Mac n’ Peas
This use to be one
of my husband’s favorite meals… oh lets face it! Mac and cheese is the ultimate comfort food
staple! So since 86ing cheese from our
diet it was only natural for us to crave some mac and cheese. Luckily I have a recipe that won’t make you
miss a thing!
It is so easy to make, I had my daughter on my hip the whole
time. She loves to help—or as she says ‘helm’,
and she is finally at that stage where she actually can (she’s 16 months
old). She did most of the pouring in
this recipe, she’s so big…
This recipe serves 2 ladies or 1 hungry man ;-)
1 ½ cups macaroni noodles (measurement not cooked)
1 cup frozen peas (or
1 can .. or broccoli- whatever you have)
3tbl earth balance butter (vegan butter)
¼ cup wheat flour
1/8 cup nutritional yeast
1 tbl mustard (I use brown, but you can use whatever)
2 tbl soy sauce
¾ cup almond milk (original- although I have used vanilla
before and that worked too)
The Fun Part—
-Cook macaroni in pot of boiling water for 8 minutes or so-
-Just before noodles are finished add peas
- Drain
-In another pot melt butter
- wisk in flour – let cook for a minute or so
-Add in nutritional yeast, mustard, soy sauce, and almond
milk
Mix sauce and noodles together, listen to that squishy sound, and enjoy J
Two ways to eat this… with a spoon… or w/ a fork ;-)
